Banana Bread

Ingredients

  • Wet
  • (4oz) 1 stick of butter
  • (165g) 1 cup of sugar
  • 2 eggs
  • 2-3 very ripe bananas
  • 1 t vanilla
  • Dry
  • (125g) 1 cup all purpose flour
  • (50g) ½ cup rolled oats
  • (65g) ½ cup whole wheat flour
  • (8g) 1 t salt
  • (7 ½ g) 1 ½ t baking powder
  • Options
  • ½ cup nuts
  • ½ cup shredded coconut
  • ½ cup chocolate chips

Method

  1. Mix up dry ingredients in a large bowl.
  2. Mix up wet ingredients in a large bowl.
  3. Pour dry ingredients into the wet ingredients. Mix with spatula until batter is cohesive.
  4. Pour batter into buttered bread pan. (we like pyrex over metal for this bread, but metal works fine.)
  5. Cool in pan for 10 minutes. Remove from pan and cool on rack.
