Banana Bread
Ingredients
- Wet
- (4oz) 1 stick of butter
- (165g) 1 cup of sugar
- 2 eggs
- 2-3 very ripe bananas
- 1 t vanilla
- Dry
- (125g) 1 cup all purpose flour
- (50g) ½ cup rolled oats
- (65g) ½ cup whole wheat flour
- (8g) 1 t salt
- (7 ½ g) 1 ½ t baking powder
- Options
- ½ cup nuts
- ½ cup shredded coconut
- ½ cup chocolate chips
Method
- Mix up dry ingredients in a large bowl.
- Mix up wet ingredients in a large bowl.
- Pour dry ingredients into the wet ingredients. Mix with
spatula until batter is cohesive.
- Pour batter into buttered bread pan. (we like pyrex over
metal for this bread, but metal works fine.)
- Cool in pan for 10 minutes. Remove from pan and cool on
rack.
